Cinco de Mayo

The 5th of May is fast approaching. Before we get into the food and celebrating the culture, what is “Cinco deMayo” anyway? Many people believe that it’s a Mexican Independence Day of some sort. It is not. It is, however, a celebration of Mexican history and cultural pride. It’s celebrated widely throughout the United States. So, what is the significance of the date? Well, in 1862, Mexico unexpectedly defeated the French in the Battle of Puebla. So, just for the record, Mexico does have an Independence Day on September 16th. That is something that doesn’t carryover to the United States but Cinco de Mayo is popular because it’s an excuse to have a festival!
So, what do you serve? It’s mainly Mexican so, of course, chips, salsa and margaritas! Personally, I like to make guacomole. I love getting fresh avocados, chopping up fresh garlic, squeezing fresh lime, shredding fresh cilanto, adding a touch of onion powder and then mixing in some fresh jalapenos. I love it!
But, I’ve heard of people doing all kinds of things for food including roasting a pig, making fresh tamales, smoking ribs for hours and even breaking out the turkey fryer for some deep fried turkey!
